SPAGHETTI CARBONARA WITH A FLAVOR TWIST
In This Recipe:
1 pack of spaghetti
2 large eggs
2 egg yolks
½ cup grated pecorino
½ cup grated parmesan
12 slices of bacon cut into ¼ inch pieces
½ bunch of chopped Parsley
1 teaspoon of chili flakes
Ramp Up Ramp Vinegar
Bring a pot of salted water to the boil. Cook pasta according to instructions on packet. Once cooked drain pasta, making sure to keep some of the pasta water for the sauce.
In a mixing bowl add eggs, egg yolks, cheese and mix until well combined.
While pasta is cooking, in a skillet over medium heat add bacon and cook until crisp. Once pasta is cooked, add pasta to the skillet with a few spoons of pasta water and turn off the heat. Add egg mixture, chopped parsley and toss pasta until well combined and continue to stir for 30 seconds.
To plate, spoon pasta into a bowl, grate fresh pecorino and top with some chili flakes.
To finish give a few generous splashes of Ramp Vinegar to brighten, lighten and elevate flavor!
