HERBY, CREAMY, TANGY POTATO SALAD

Ingredients: 

3 lbs of fingerling potatoes
1 bulb of garlic
1 bunch of parsley
1 bunch of mint
1 bunch of dill
1 4oz tub of crème fraiche
2 lemons
½ cup of olive oil
Salt and pepper
Ramp Up - Ramp Vinegar

 

Instructions: 

In a medium sized pot, add potatoes and cover with water. Add a few pinches of salt and one garlic clove cut in ½. Cut off stems from the bunch of parsley and add these too.

Bring potatoes to the boil on a medium heat and cook for approximately 20 minutes till potatoes are soft and cooked. Drain potatoes, discard garlic and parsley stems and cool potatoes.

Once potatoes are cool, in a bowl, add olive oil, a few splashes of Ramp Vinegar, crème fraiche, a pinch of salt and pepper, squeeze 1 lemon and stir to combine. Roughly chop the herbs, add to potatoes and gently combine. Grate lemon zest from one lemon over the top of the potatoes, add a few more splashes of Ramp Vinegar and serve.
